Tomato Soup


The most comforting comfort food ever.
This week I lost my dog Henry. For 12 years he was my constant companion. Anyone who knows me, knows this was a difficult loss for my family. After saying goodbye to such a special creature, my daughter and I were in need of some serious comfort food. Hunting around my pantry, I was able to cobble together the simple ingredients needed to make this restorative soup. You can use canned, crushed tomatoes for this recipe, but if you're lucky enough to have canned your own tomatoes from last summer's bounty, all the better! Paired with a warm grilled cheese sandwich, nothing could be more comforting. 
Here's my recipe:

Tomato Soup

Ingredients:

2bl butter
2tbl olive oil
2 tbl dried thyme
1 onion, chopped
2 cloves of garlic, minced
1 sm can of tomato paste
1-28 ounce can of crushed tomatoes (or home canned)
1 tbl of agave (or more to taste)
1/4 tsp red pepper flakes
1-2 tsp of salt (adjust to your taste)
2c water
1 1/2c chicken both (or 2c if omitting wine)
1/2c white wine (optional)

Directions:

1. In a stock pot over medium-low heat, melt butter. Add olive oil. Saute' onion, garlic and thyme for about 5-7 minutes or until soft, fragrant and translucent. 

2. Add tomato paste. Combine and cook for a few more minutes to let the flavors combine.

3. Add the tomatoes, agave, salt and pepper flakes. Mix and simmer for about 45 minutes.

4. Using an emmersion blender (or a tradtional blender) puree the soup to desired consistency. Taste and adjust the seasonings.

Enjoy with your favorite grilled cheese sandwich!
